I have an iPod touch, but I don't think it's possible to learn how to play guitar by using this app.

Certainly "learn" is up to debate. How about "practice"? Apart from either device's bigger width than that of a guitar's, there's nothing wrong with the concept, provided the iGUI is capable of detecting as many as 5 simultaneous "finger presses", and not only dynamic gestures.

(Strangely enough the demo photo shows the iDevice being plucked by 2 hands at once... what is it supposed to be, a cithre?)

You can't buy an iPhone in Germany without a locked contract (so you would need to throw away your hardware if, say, you move to another country), so I won't consider buying. If I would consider, I'd probably decide it's too expensive anyway :)
