I just did a Google search for publishers and found Lulu. It seemed like they offer the services I need (currently working on 3 books), doesn't restrict subject matter, and allows me to design the books myself.
I found your comments and warnings helpful. I never thought it would be easy, but am always cautious about any vendor/service I haven't used before. I taught MS Word for many years and still do a bit of coaching, so I'm comfortable with the formatting requirements. I learned a lot more by completing an online proofreading course based on CMOS, which includes a lengthy chapter on e-publishing and manuscript preparation.
From the Lulu Web site, it sounds like I can pick and choose the services I want them to provide and can control the parts I want to do myself.
I'm a happy camper and will add Lulu to my list of "checks out as legit self-publishers.
