Scitedaily has a story titled "Google’s Book Scanning Technology Revealed" about high speed book scanning. It discusses projects at University of Tokyo, Google, and elsewhere.

"The Japanese researchers say the system works so well that they can take pictures of pages in mid-flip. This is why they use a high-speed camera; the idea is that the human user can just flip rapidly through the book and the camera can rapidly snap all the pages, which are later undistorted."
