The Web Developer toolbar is the single most useful extension IMO.

*Website won't let you highlight text? Right click > Disable javascript.
*Forgot that password? Right click > Show passwords.
*Want to register for a website but don't care enough to fill in 50 radio dials about your advertising preferences? Right click > populate form fields.
*I deconstructed Google's URL (http://blogoscoped.com/forum/44192.html) with right click > view form information.
*Does a website have a comment field with a maximum length and you need to send a longer one? Right click > Remove maximum lengths.
*Website completely jacked up in your browser? Right click > Disable css
*Website messing with your right click? Toolbar > Disable javascript.
*Website won't let you highlight text for selecting? Right click > disable javascript

And these functions are useful just for surfing the web...there are a zillion more for actually doing web development!
