   You'll find out now description for Gmail chat and the desktop client occupied the same space. It seems like that they're going to abandon the current desktop client (while releasing a completely redesigned one, maybe).

Does anyone know if Google could fully rely on HTML5 for Gmail Talk, in the future?

They could use replace their Gmail polling method with Web Sockets. For peer-to-peer communication (like audio/video chat and file transfer) they need a custom protocol, which currently cannot be implemented using HTML5 and thus still needs a plugin.
