So, am I correct after my research...the current OS is OSX Tiger. This will be replaced by OSX Leopard in October.

As my wife and I are about to each get a nice 20" iMac, (thanks for the refresh this week, nice timing for us)..

do we wait til October for OSX Leopard?

There is no OS 11 on the horizon, is there?

If you can wait till Leopard (OS X 10.5) is released, you would save yourself about $200 dollars. That is the cost of buying a family pack license for the OS if Leopard upgrade keeps the same price that Tiger has right now. Tiger (OS X 10.4) came out in April of 2005. So you probably won't see OS X 10.6 until 2009.

I believe that you would get the new iLife '08 software on any new computer that you buy from Apple.

Brinke, The family pack license is what you would probably want:

<< Family Pack Software License Agreement allows you to install and use one copy of the Apple Software on up to a maximum of five (5) Apple-labeled computers at a time as long as those computers are located in the same household and used by persons who occupy that same household. >>

So instead of buying 2 copies of the Leopard Upgrade at $129.99 for each copy, you can buy one family pack software license and install it on both of your computers for $199.99. These example prices are for what Tiger upgrade costs today so I'm making the assumption that Leopard might cost around the same price.
